Since I was born in Venezuela, I wanted to visit this place and see if the cachapas lived up to my memories of the best cachapa spots in Venezuela. The cachapa with queso de mano, which is the most traditional, was quite good. The cheese was very good, and there was plenty of it. I have to say to everyone reading this that I'm not one of those people who likes to put anything in a cachapa other than good cheese. I know that younger generations of Venezuelans add pernil (roasted pork leg), carne mechada (shredded beef), and a thousand other things, and they also add other cheeses, but for me, at 68 years old and having eaten cachapas since the late 1950s, the traditional cachapa is made with queso de mano and nothing else. If you're going to eat something else, you don't put it inside the cachapa. I think that for Colombians who have never lived in Venezuela, this place will be expensive, and the typical Santander native probably won't like it, since their staunch regionalism doesn't allow other foods to appeal to their tastes. The service was actually good; maybe I just got lucky. When I arrived, there were people, but not many, and the time between ordering and the food was just right. A cachapa is something that should be made fresh to order, and if you don't want it raw, you have to cook it for the right amount of time. A cachapa isn't like a hamburger, where you can prepare it in advance and just assemble it to take to the table. If the place is full and has pre-orders, it's understandable that it will take a little longer. I had no problem parking since there was plenty of space on the street. The ambiance is what they should improve the most. It's located in a place that, in my opinion, isn't very easy to access, but since I say "in my opinion," if you ask someone who lives near the business, they'll tell you it's the ideal location.

The place is nice but the service is very slow, so if you're hungry, it's best to arrive early. The wait time for each order is between 40 and 50 minutes, which is slow. I give it a 9 out of 10; they need more people in the kitchen.
